I've installed the ISO and freeblox. I'm not seeing any kind of documentation and I can't see how to allow codecs in the sip policy..

With basic media profile you should able to configure only in bypassing mode,
Adding Allo Transcoding Card will give you the support to configure codecs while creating media profile
